A breakfast at Pür & Simple in Dartmouth–Penhorn, Canada, was the starting point for our skillet idea. Eggs, bacon, crisp textures, sweetness and a little spice came together in a way that felt generous without being ordinary. Serving it in the skillet was part of the pleasure.
It was one of those meals that makes you think about breakfast differently. I could immediately imagine that kind of dish in the Algarve: a relaxed brunch, a meal around a day of golf, or simply a reason to sit down and enjoy the morning rather than rush through it.
The Lebrewski version has its own ingredients and character; the inspiration is the feeling of that meal. That distinction matters across the menu. We are not trying to copy a holiday meal exactly. We are taking the things that made it memorable—flavour, texture, generosity and presentation—and developing something that belongs at our own table.
