When autumn tastes like goulash

A household ritual, a rich stew and a small change that made the dish feel like mine.

The first goulash of the year is one of the signs of autumn in our house. I love the depth and comfort of it, but I was never completely happy with the potatoes in the version I started cooking. Soft potato inside a rich stew was not the contrast I wanted.

So I began making little roast-potato cubes instead—roughly a centimetre across, crisp on the outside and soft within. They became croutons on top, with sour cream, nigella seeds and parsley. The contrast changed the whole plate for me.

That is the kind of development I enjoy: not changing a dish just to be different, but noticing something that could work better and cooking it again until it does. It is also why Heavy Rotation matters to Lebrewski. There should be room for food that suits the season and means something to the person cooking it. A winter dish can be comforting, generous and still have every detail considered.
